I arrive 2.5 hours before the first course, stage the proteins, get the sauces moving, and pull the produce that needs cold-holding into a cooler so your fridge stays usable for what guests bring.
The Kent County waterfront properties off Greenwich Cove run a little tighter on counter space, and the menu adapts. Pre-set composed first courses, fewer last-minute platings, more done in advance. The result on the table is the same. Five courses come out hot, on time, served, and the kitchen is empty at midnight.
